Pumpkin and chocolate.

I have an awesome recipe for Pumpkin Chocolate Chip Cookies.  Usually I don’t want to share this recipe because I long for fame and fortune and I don’t want you gettin’ in my way.  But then I realize that I wouldn’t even have this recipe if it wasn’t for my brother in law Roger who makes amazing Pumpkin Chocolate Chip Cookies and his amazing generosity.  Since he shared with me I felt like I should maybe share it with other people.

Internet people.  Like Shanan.  She has a blog that I’ve been following for a little while now where she posts some freakin’ delicious looking recipes.  Like Pumpkin Pecan Pie.  Doesn’t that sound so good?  One day, if some people ever get my oven fixed, I’m definitely going to make it. 

So I heard her plea over the world wide web for a good Pumpkin Chocolate Chip Cookie and I shared my recipe and I’m pretty sure it changed lives over at her house.  Her husband was so complimentary of them I started getting nervous that he was looking for a sister wife.

Pumpkin Chocolate Chip Cookies
(Kate’s but really actually Roger’s)

1 cup shortening
3 cups sugar
2 eggs
5 cups flour
2 tsp baking powder
2 tsp soda
1 tsp salt
2 tsp cinnamon
2 tsp nutmeg
2 cups pumpkin
2 cups semisweet chocolate chips (I like to use mini ones)
2 tsp vanilla

Cream shortening and sugar, add eggs. Sift dry ingredients and add to creamed mixture alternately with pumpkin. Fold in chocolate chips and vanilla. Drop onto greased cookie sheet. 375◦ 10-12 minutes.  Makes 5 - 6 dozen.


I like these the very best after they’ve cooled completely on a cooling rack for an hour or more.  Or the next day for breakfast (lunch and dinner).

I have a similar Pumpkin Chocolate Chip Recipe... We add frosting and then stick them in the freezer. Eating them when they are deliciously cold is awesome! :)

Kate, these are AWESOME cookies. Making them again tomorrow (when I get more shortening). The hubby has been butter in my hands since I made them last. Will forever be in debt to you! Thank you for sharing this recipe with me and letting me share it with the world from my site of the blogosphere too!

And wish I lived close - I'd make you that sandwich and bring it on a platter. Special people deserve it. ;)

i'm making these right now. they are in the oven. halfed the recipe because it's HUGE!
