Domestic Wednesday.
I realize I claim to be a domestic goddess and a lot of people I live with might disagree with that claim. Really, I only claim to be a goddess, but that just seems pretentious or something without the domestic in front of it.
Wednesday is my domestic day. My in laws come on Thursdays to tend my kids so I can go to work and be a hair goddess, so on Wednesdays I try to get my house into decent shape so they don't think that we live in total squalor. I don't know why I care so much. The first Thursday they came up here to tend I literally cleaned out my bathroom closet first. Really? Who is the one in this house who has OCD? It's definitely not me but that dang OCD can be contagious in some circumstances.
So why am I blogging? I have a lot of work to do! But I work better under pressure so I'm going to waste a bunch of time today and then frantically scramble to pull all my crap together at the end of the night. It's more fun that way.
So I make the most delicious homemade pancakes. I usually make them on Tuesdays. Not because I'm a girl with a plan but because I'm a girl without a plan. Charlotte has dance on Tuesdays and then we usually come home and I have no idea what to make for dinner and pancakes and eggs are easy peasy. (By the way, I have a client whose husband doesn't let her make breakfast for dinner. I think that's a crying shame.)
Kate's Pancakes from Scratch
2 cups flour
2 TBS baking powder
3 TBS sugar
1 tsp salt
1/4 cup of butter (that's half a stick) melted
2 eggs, beaten
2 cups of milk
Put all dry ingredients in a big bowl and mix together with a fork. Then add the wet ones and whisk together. Let sit for 10 minutes before you use batter. It will be pretty thick and it makes the yummiest, fluffiest pancakes.
Yesterday I made them all fancy by adding 2 mashed up ripe bananas and 1/2 cup chopped walnuts. Sometimes I will also fancy them up with mini chocolate chips if I'm feeling like a super nice momma.
There you go. Domestic stuff for a Wednesday. Now stop bugging me so I can mop the kitchen floor.

I hope you got the kitchen floor mopped because I need you to come over to my place and be domestic, oh and make some yummy pancakes. I'm just too lazy.
I can testify to the yummy-ness of these pancakes, and to the craziness of your cleaning schedule, but go Goddess go! It makes for an interesting life for me.
Those sound good! And mini-chocolate chips, I'm impressed, you little overachiever, you.
I also get cleaning OCD, but with kids undoing everything I clean, it makes me crazy. So I'll have one day where I am scrubbing with a toothbrush, and another where I leave everything out like, "I give up." But it makes me nuts if people come over and there is stuff all over. Or out at all. It doesn't seem to bother my hubby, though :)
I tried the pancakes and they are yummy!
What!?! No breakfast for dinner, grounds for divorce.
